John Cotts book cover

John D. Cotts, associate professor of history and chair of the history department, has published a new book titled “Europe’s Long Twelfth Century: Order, Anxiety and Adaptation, 1095-1229.” The book was released Nov. 9, 2012 by Palgrave Macmillan. According to the description, between 1095 and 1229, Western Europe confronted a series of alternative cultural possibilities that would fundamentally transform its social structures, its intellectual life and its very identity. It was a period of difficult decisions and anxiety rather than a triumphant “renaissance.” Cotts shows how new social, economic and religious options challenged Europeans to re-imagine their place in the world; provides an overview of political life and detailed examples of the original thought and religious enthusiasm of the time; and presents the Crusades as the century's defining movement.

City construction project will temporarily close Stanton Street

On Monday, Nov. 26, The City of Walla Walla is starting a construction project that will replace the broken culvert in Stanton Street, which is on the east side of campus. The street will be closed from University Street to Boyer Ave. The project will require about three weeks to complete. The diagram shows where fencing will be installed.

Bookstore now carrying Alaffia sustainable skin care products

Inspired by a recent presentation on campus by alumna Rose Hyde ’95 and her husband, Olowon-n’djo Tchala, the bookstore is now carrying a line of fair trade skin care products produced by the couple’s cooperative, Alaffia Sustainable Skin Care. Hyde and Tchala spoke on campus Nov. 8 on the topic of “West Africa Today – Empowerment of Women in Togo Through Fair Trade of Shea Butter, Education and Health.”

“Everything about this line is a perfect fit for the Whitman community,” says Janice King, book acquisition specialist. “The mission promotes gender equality, sustainability, community empowerment, education and fair trade every step of the way.”

Hyde met Tchala while serving in the Peace Corps after graduating from Whitman. They started Alaffia together to empower women in villages near Tchala’s rural home in central Togo. The women gather shea nuts from wild trees, which are used to make the Shea butter that goes into the skin care products. Final production takes place in Olympia, Wash., and proceeds benefit the women’s cooperative and funds community enhancement projects to improve educational opportunities for children, reforest devastated areas, cultivate suitable biofuel crops for use in cooking, and provide urgently needed maternity care.

“These products are exceptionally high quality at a student friendly price,” King says.

Can’t beat good old Pumpkin Pie for Thanksgiving

Pumpkin Pie

As you plan to enjoy Thanksgiving with family and friends, here’s a recipe for “a lovely, tried-and-true, traditional” pumpkin pie, provided by Krista Meyer of the president’s office. She says, “I have been making homemade pies for years. The fall squash/pumpkin pie is my family’s all-time favorite! The warm spices make a cold day easy to handle and make the house smell fabulous! I hope this recipe makes your holiday special! Have a fantastic Thanksgiving!”

Serves six. Preparation time: one hour. Cooking time: one hour.

A store-bought crust would work just fine for most beginners. For the more adventurous types, here’s her Flaky Pie Crust recipe, which makes two pie crusts:
21/2 c Flour
1/2 c Solid Shortening (i.e.Crisco)
1/2 c Butter (1 stick)
1 tsp Sugar
1 tsp Salt
6 Tbs Cold Water

Mix the dry ingredients together, then cut in the shortening and butter with a pastry knife, or two knives, until the shortening and butter are mixed well with some of the pieces no bigger than the size of peas. Drizzle the water onto the mixture and gently blend in, until it begins to hold together. Divide the dough into two sections. Place each half onto waxed paper sheets. Fold the sheet of waxed paper over the dough sections like a package and press into semi-flat rectangles. Refrigerate for at least 30 minutes. Remove from the refrigerator and after allowing the dough to warm slightly roll it into a circle (on your waxed paper) slightly larger than your pie pan. Carefully pick up the waxed paper and turn the crust over into the pan.

Pumpkin Pie Filling – This recipe only makes one pie:
2 cups baked pumpkin or winter squash (cut in half crosswise, seeds and strings removed, and baked shell side up in a 325-degree F oven until tender, about one hour)
1 1/2 cups heavy cream
1/4 cup brown sugar
1/2 cup white sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg (allspice)
1/4 tsp cloves
2 slightly beaten eggs

Pour the mixture into the pie shell. Bake 15 minutes at 425 degrees F, then reduce heat to 350 and bake about 45 minutes more or until an inserted knife comes out clean. Serve with bourbon or vanilla, sweetened whipped cream.

For topping:
2 cups heavy cream, whipped with
1 Tbsp white sugar and
2 tsp bourbon or vanilla.

Lecture: “The Paradoxical Waste from Efficiency.” O’Donnell Visiting Educator Jamie Workman presents the third in a three-part series of lectures called “Three Things Your Parents Didn’t Tell You About Water Conservation.” Here he explores how titans of industry like GE, Google and Microsoft have failed to conserve the global waters supply. 7:30 p.m. in Olin 130.
